Melanie TickleOur very own baking expert Mel was approached by the production team of The Great British Bake Off after posting some of her tasty treats on social media and asked to apply for the show. While she’s not found time to show off her skills in the tent yet, we’ve managed to snap her up to head up our baking course and help you create some of the amazing cakes she’s become known for.

Where does your love of baking come from? 

Mel says: “My passion comes from both of my grandmothers, each had their own style and skills and I was lucky enough to learn from both of them. One of my grandmothers was amazing at creating pastry dishes. I also had a great home economics teacher that inspired me.”

Have you always been interested in cooking?

“My love of cooking goes back a very long way, since I was about 10 years old. I’ve always wanted to go into the catering industry but a job came along and I changed career path. I’m excited to be back in the kitchen and sharing my knowledge now though.”

What are your specialties and favourite dishes to bake?

“I love yeast recipes (think hot cross buns and panettone) and tray bakes – basically, anything that tastes amazing.”

What are your top tips for budding cooks?

“Start young, experiment and remember to clean up after yourself!” 

What can people expect from your class and teaching style?

“Fun, fun and flavour.”

What’s your favourite cuisine?

“I mentioned that I love flavour, so it has to be Thai. I love any restaurant that serves fresh, wholesome and tasty food though.” 

If you could eat only one dish, what would it be?

“That’s a really tough one, can I choose two? I love cheesecake and pavlova.”
